Coconut Cookies (Coconut Macaroons)




Being a mother of 9 months old angel, cooking basic food items is like an achievement in itself sometimes. But, whenever I get lil extra time, love to try new and quick things. I am a big fan of coconut. I’ve tried many coconut cookies recipes in past few years, but nothing turned out so perfect, so airy and soft. So, this is my favourite and fixed receipe for Coconut Cookies, Crispy and Golden from outside, Soft and Moist from inside. Perfect to soothe your sweet tooth. Goes well with Tea/Coffee. It just melts in mouth. Preparation time for the recipe is not more than 10 minutes. It can be stored for a week.

Ingredients:
  • Desiccated coconut - 2 Cups
  • Condensed Milk - 50 ml 
  • Vanilla Essence - 1 tablespoon
  • Egg Whites - 03
  • Butter for greasing or Parchment paper



Method:


1.   Put oven for preheating, till the time we prepare the raw. 
2.   Grease the pan with butter and keep aside.
3.   In a bowl, add desiccated coconut, condensed milk and vanilla essence. Mix until all the 3 ingredients are well combined and keep aside.
4.   Take egg whites in a separate bowl and with the help of electric beater, beat till stiff peaks are formed. 
5.   Add this egg whites to coconut mixture and mix it well using cut and fold method (till it is combined well). Mixture is all ready to be baked.
6.   In prepared baking pan, form the heaps of mixture, using two spoons, spacing about 1 inch apart.
7.   Bake for about 20 minutes at 180 degrees, until the bottoms and edges are deeply golden and the tops are lightly golden. Let the cookies cool for a minute.
8.   Melt the chocolate in a microwave-safe bowl, stopping to stir every 30 seconds, until smooth. Dip the bottoms of the cookies in the chocolate and keep them upside down in a plate.
9.   Refrigerate for about 10 minutes, or until the chocolate is set. Decorate with chocolate, if desired. 
10.  If you dont like chocolate footing, just put some jam in the center and enjoy the delicious plain.

well, this is the first time I am posting any recipe, I love ice-creams, and keep trying all the new flavours being introduced in the market. So, i thought why not to make ice-cream at home. Kiwi White Chocolate Mousse Cake

Have called up guests for tomorrow's lunch. Ok, starters and main course decided.. But what should be the dessert.. hmmm.. not in a mood to bake either, whats in the fridge, Kiwis.. oh great, lets make Kiwi Mousse Cake.. The white chocolate is so soft, smooth and silky.
